The fermentation process first focused on the neutral side chains of rhamnogalacturonan type I, occurring between 0 and 4 hours, followed by the homogalacturonan units, fermented between 0 and 24 hours, and concluding with the rhamnogalacturonan type I backbone fermentation, which spanned from 4 to 48 hours. The potential exists for differing fermentations of various pectic structural units in different segments of the colon, impacting their nutritional value.
